To embed a Kanopy video into a Canvas course follow the steps below:
First: Find the video in Kanopy that you would like to include in the class. From the main page for the video:

Then navigate to the Canvas course page where you want to embed the video and click the Edit button:
Click on the 'embed' button in the editor:
Paste the code into the resulting pop-up window, and click 'Submit'
Then scroll down and click on 'Save & Publish'
